- 4 ounces of prime rib, thinly sliced
- 1/2 cup of diced onion
- 1/2 cup of diced red bell pepper
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 cup of shredded cheddar cheese
- 4 tablespoons of unsalted butter
- Optional toppings: salsa, guacamole, sour cream

- Start by sautΓ©ing the diced onion and red bell pepper in a pan with 2 tablespoons of unsalted butter over medium heat until they’re softened, about 5 minutes.
- In another pan, scramble the beaten eggs with 2 tablespoons of unsalted butter over medium heat until they’re cooked to your liking.
- To assemble the burritos, place a flour tortilla on a plate and add scrambled eggs, prime rib slices, sautΓ©ed onion and red pepper, salt, black pepper, and cheddar cheese on one half of the tortilla.
- Fold the other half of the tortilla over the filling, tucking in the sides to keep the filling from spilling out. Repeat with the remaining tortillas and filling.
