Ingredients:
- 2 cups leftover prime rib, diced
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 tbsp minced garlic
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/4 tsp salt
- 8 small flour tortillas
- Cooking spray

Instructions:
- Preheat your oven to 425Β°F and line a large baking sheet with parchment paper.
- In a large skillet, heat a drizzle of oil over medium heat. Add the onion, bell pepper, and minced garlic, and cook until softened, about 5 minutes.
- Add the diced prime rib to the skillet and cook until heated through.
- Stir in the chili powder, cumin, and salt, and cook for another minute.
- Lay a tortilla on a flat surface and place a few tablespoons of the prime rib mixture down the center. Sprinkle with a handful of shredded cheese.
- Roll up the tortilla tightly, tucking in the ends, and place seam side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.
- Lightly spray the taquitos with cooking spray and bake for 12-15 minutes, or until golden brown and crispy.
- Serve the hot taquitos with your favorite dipping sauce, such as salsa, guacamole, or sour cream.
