Ingredients:
- 1 lb raw prawns, peeled and deveined
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 cup Arborio rice
- 4 cups chicken or seafood broth
- 1 cup frozen peas
- 1 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, for garnish

- In a large saucepan, heat a small amount of oil over medium heat.
- Add the onion and garlic and cook until soft and fragrant, about 5 minutes.
- Stir in the Arborio rice and cook for 2-3 minutes, or until the rice is lightly toasted.
- Gradually add the broth, one ladleful at a time, stirring constantly and allowing the rice to absorb the liquid before adding more.
- After about 15-20 minutes, the rice should be cooked and the mixture should be creamy.
- Stir in the prawns, peas, Parmesan cheese, salt, and pepper.
- Cook for an additional 5 minutes, or until the prawns are cooked through.
- Serve the prawn risotto garnished with fresh parsley and a sprinkle of extra Parmesan cheese, if desired.
