- 2 pounds (908g) Yukon gold potatoes, scrubbed and dried
- 4 tablespoons (56g) unsalted butter
- 1/2 cup (120ml) heavy cream
- 1 teaspoon (5g) salt
- 1/2 teaspoon (2g) black pepper
- 1/2 cup (57g) grated Gruyere cheese
- 1/2 cup (57g) grated Swiss cheese
For the Topping:
- 2 tablespoons (28g) unsalted butter
- 1/4 cup (28g) panko breadcrumbs
- 1/4 cup (25g) grated Parmesan cheese
- 1/4 teaspoon (1g) garlic powder
- Salt and pepper to taste

Instructions:
- Preheat oven to 400Β°F (200Β°C).
- Place the potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat.
- Reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are fork-tender.
- While the potatoes are cooking, melt 4 tablespoons of butter in a saucepan over medium heat.
- Add the heavy cream, salt, and pepper and heat until warmed through.
- Drain the potatoes and place them back in the pot.
- Mash the potatoes with a potato masher until they are slightly chunky.
- Stir in the Gruyere cheese and Swiss cheese until melted and well combined.
- Spoon the mashed potatoes into a 9×9-inch (22x22cm) baking dish.
- In a small saucepan, melt 2 tablespoons of butter over medium heat.
- Add the breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper and stir until well combined.
- Sprinkle the breadcrumb mixture over the mashed potatoes.
- Bake in the preheated oven for 15-20 minutes, or until the breadcrumbs are golden brown and the cheese is melted.
