- 1/4 cup brown sugar
- 2 tablespoons chili powder
- 1 tablespoon paprika
- 1 tablespoon garlic powder

- 1 tablespoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper
- 1/4 cup apple cider vinegar
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- Wood chips for smoking (hickory, mesquite, or apple)

Instructions:
- In a small bowl, mix together the brown sugar, chili powder, paprika, garlic powder, onion powder, salt, black pepper, cumin, oregano, thyme, and cayenne pepper.
- In a large resealable plastic bag, mix together the vinegar, soy sauce, and olive oil. Add the ribs and the dry rub to the bag, making sure the ribs are well coated. Marinate for 4 hours in the refrigerator, turning occasionally.
- Prepare your smoker according to the manufacturer’s instructions and preheat to 250Β°F (120Β°C).
- Remove the ribs from the marinade and pat dry. Place the ribs on the smoker grates and smoke for 4-5 hours or until the internal temperature reaches 145Β°F (63Β°C).
- Serve hot with your favorite sides, such as coleslaw, corn on the cob, or baked beans.
