Here’s what you’ll need:
- 2 cups fresh corn kernels (about 4 ears of corn)
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/2 cup finely chopped onion
- 1 jalapeno pepper, seeded and finely chopped
- 2 tablespoons fresh cilantro, chopped
- 2 eggs, beaten
- Vegetable oil for frying

- First, let’s make the batter. In a large mixing bowl, whisk together the flour, baking powder, salt, cumin, chili powder, garlic powder, paprika, and black pepper.
- Next, add the corn, onion, jalapeno pepper, cilantro, and eggs to the bowl and stir until everything is well combined.
- In a large pan over medium-high heat, heat about 1 inch of vegetable oil until it reaches 375Β°F.
- Using a cookie scoop or a tablespoon, drop rounded scoops of the batter into the hot oil. Fry for 2-3 minutes on each side, or until the fritters are golden brown and crispy.
- Remove the fritters from the oil with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.
