- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, at room temperature
- 1 and 1/2 cups granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 tablespoons granulated sugar
- 2 teaspoons ground cinnamon

- Preheat your oven to 375Β°F (190Β°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt.
- In a large bowl, beat the butter and sugar together until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- In a small bowl, mix together the 2 tablespoons of sugar and the cinnamon.
- Using a cookie scoop or a tablespoon, form the dough into 1 inch balls.
- Roll each ball in the cinnamon sugar mixture, and place on the prepared baking sheet.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

This recipe is also easy to customize. If you prefer your cookies with a bit more of a cinnamon kick, simply increase the amount of cinnamon in the coating. And, if you prefer your cookies on the sweeter side, you can add a bit more sugar to the dough.
