- Wash and dry the potatoes, and then poke a few holes in them with a fork.
- Bake the potatoes for 45 minutes, or until they are fork-tender.
- Remove the potatoes from the oven and let them cool for 5 minutes.
- Cut each potato in half lengthwise and scoop out the flesh, leaving a thin layer on the skin.
- In a bowl, mash the potato flesh with the Greek yogurt, sour cream, 1/2 cup of the cheese, bacon bits, chives, salt, and pepper.
- Spoon the mixture back into the potato skins, mounding it slightly.
- Sprinkle the remaining cheese on top of the potatoes.
- Place the potatoes back in the oven and bake for an additional 10-15 minutes, or until the cheese is melted and the edges are crispy.
- Remove from the oven and let cool for 5 minutes. Serve and enjoy!
