- Preheat the oven to 350Β°F (175Β°C). Spread the sliced almonds on a baking sheet and toast in the oven for 5-7 minutes or until golden brown. Remove from the oven and set aside.
- Bring a pot of salted water to a boil. Cut off the ends of the broccolini and blanch for 2-3 minutes until bright green and slightly tender. Drain and rinse with cold water to stop the cooking process. Pat dry with paper towels.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing.
- In a large bowl, add the broccolini, cherry tomatoes, sliced red onion, and crumbled feta cheese. Pour the dressing over the top and toss to coat.
