- Start by pounding the chicken breasts to an even thickness.
- Lay a slice of ham and a slice of Swiss cheese on top of each chicken breast.
- Roll up the chicken breast and secure with toothpicks.
- In a shallow dish, place the flour. In another shallow dish, beat the eggs. In a third shallow dish, mix together the breadcrumbs, garlic powder, dried thyme, salt, and pepper.
- Dip each chicken roll into the flour, shaking off any excess.
- Dip each chicken roll into the beaten eggs, making sure to coat well.
- Roll the chicken rolls in the breadcrumb mixture until they’re fully covered.
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken rolls to the skillet and cook for 2-3 minutes on each side, or until they’re golden brown.
- Transfer the chicken rolls to the lined baking sheet and bake in the oven for 20-25 minutes, or until the chicken is cooked through.
- While the chicken is baking, in a small bowl, mix together the Greek yogurt, Dijon mustard, lemon juice, and chopped parsley to create the sauce.
