- In a large saucepan, heat some oil over medium heat. Add the chopped onions and sautΓ© until they are soft and translucent, about 5 minutes.
- Add the marinated chicken to the saucepan and cook until browned on both sides, about 8-10 minutes.
- Add the long-grain rice to the saucepan and stir until it is well combined with the chicken and onions.
- Pour in the chicken broth, making sure to cover all of the ingredients. Add the raisins and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let the mixture simmer for about 20 minutes or until the rice is cooked and the liquid has been absorbed.
- While the mandi is cooking, chop the apples, pears, and strawberries and set them aside.
- When the mandi is finished cooking, fold in the chopped fruit and let it sit for a few minutes to allow the flavors to meld together.
- Serve the chicken mandi in bowls and garnish with fresh cilantro.
