Chicken Parmesan Sandwich Recipe

- 1 cup Italian-seasoned breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- Salt and pepper, to taste

- Preheat your oven to 400Β°F. Line a baking sheet with parchment paper.
- In a shallow dish, mix together the breadcrumbs and salt and pepper. In another shallow dish, beat the eggs. In a third shallow dish, place the flour.
- Coat each chicken cutlet in the flour, then the beaten eggs, and finally in the breadcrumbs. Place the chicken cutlets on the prepared baking sheet.
- Bake the chicken cutlets for 20-25 minutes, or until golden brown and fully cooked.
- While the chicken is baking, heat the marinara sauce in a small saucepan over medium heat.
- Toast the hoagie buns in a toaster or under the broiler until lightly golden.
- To assemble the sandwiches, spread some of the marinara sauce on the bottom of each hoagie bun. Place a chicken cutlet on top of the sauce, then sprinkle with some of the mozzarella cheese. Repeat with the remaining ingredients.
- Place the assembled sandwiches on a baking sheet and return to the oven for 5-7 minutes, or until the cheese is melted and bubbly.
