- 1 tablespoon brown sugar
- 1 teaspoon cornstarch
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 1/2 red bell pepper, julienned
- 1/2 yellow onion, sliced
- 2 carrots, julienned
- 2 tablespoons unsalted butter
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 2 tablespoons chopped green onions

- Cook the udon noodles according to package instructions until al dente. Drain and set aside.
- In a small bowl, whisk together the sesame oil, soy sauce, mirin, brown sugar, and cornstarch until well combined. Set aside.
- In a large skillet or wok, heat the vegetable oil over high heat. Add the red bell pepper, yellow onion, and carrots and stir-fry for 2-3 minutes or until slightly softened. Remove from the pan and set aside.
- In the same pan, melt the butter over medium heat. Add the garlic and stir-fry for 30 seconds.
- Add the cooked udon noodles to the pan and stir to combine with the garlic butter. Add the prepared sauce and stir until the noodles are well coated.
- Return the stir-fried vegetables to the pan and stir to combine with the noodles. Add the salt and pepper and stir to evenly distribute.
- Serve the hibachi noodles hot, topped with optional chopped green onions.
