Homemade Beef Stew from Beef Bone Broth

- 1 lb boneless beef stew meat, cut into 1-inch cubes
- 3 tablespoons olive oil, divided
- Salt and pepper, to taste
- 2 medium onions, chopped
- 4 cloves of garlic, minced
- 1 cup red wine
- 4 cups beef bone broth
- 1 can (14.5 oz) diced tomatoes
- 2 bay leaves
- 1 teaspoon dried thyme
- 2 carrots, peeled and chopped
- 2 potatoes, peeled and chopped
- 2 cups frozen green beans

- First, let’s brown the beef. In a large pan over medium-high heat, heat 1 tablespoon of olive oil until hot. Add the beef cubes to the pan and season with salt and pepper. Cook the beef, stirring occasionally, until browned on all sides, about 5-7 minutes. Remove the beef from the pan and set aside.
- In the same pan, heat the remaining 2 tablespoons of olive oil over medium heat. Add the onions and garlic and cook until softened, about 5 minutes.
- Next, add the red wine to the pan and bring to a boil, scraping up any browned bits from the bottom of the pan. Cook until the wine is reduced by half, about 5 minutes.
- Add the beef bone broth, diced tomatoes, bay leaves, thyme, and the beef to the pan. Stir to combine and bring the mixture to a boil. Reduce the heat to low, cover the pan, and let the stew simmer for 2 hours, or until the beef is tender.
- During the last 30 minutes of cooking, add the chopped carrots, potatoes, and frozen green beans to the stew. Stir to combine and continue cooking until the vegetables are tender.
- When the stew is done, remove the bay leaves and let the stew cool for a few minutes before serving.
