- 1 cup shredded Mexican blend cheese
- 8 soft tortillas
- 1 tablespoon olive oil
- 1 teaspoon chili powder

- Salt and pepper, to taste
- Fresh cilantro, for garnish
- Sour cream, for serving

- Preheat the oven to 375Β°F.
- In a large bowl, combine the cooked, shredded turkey, salsa, and 1/2 cup of the shredded cheese.
- In a small bowl, whisk together the olive oil, chili powder, cumin, salt, and pepper.
- Lay out the tortillas and divide the turkey mixture evenly among them. Roll the tortillas up tightly and place them seam-side down in a 9×13 inch baking dish.
- Pour the olive oil mixture over the top of the enchiladas and sprinkle with the remaining shredded cheese.
- Bake in the oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Serve with fresh cilantro and a dollop of sour cream on the side.
