Ingredients:
- 1 pound of whole-grain pasta
- 2 cups of cherry tomatoes, halved
- 1 cup of cucumber, diced
- 1 cup of red bell pepper, diced
- 1/2 cup of red onion, thinly sliced
- 1/4 cup of fresh basil, chopped
- 2 tablespoons of olive oil
- 2 tablespoons of red wine vinegar
- 1 clove of garlic, minced
- Salt and pepper to taste
Instructions:
- Cook the pasta according to the package instructions until it’s al dente. Drain and rinse with cold water to cool.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red bell pepper, red onion, and basil.
- In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and pepper.
- Pour the dressing over the pasta mixture and gently toss to combine.
- Cover and refrigerate the pasta salad for at least 1 hour or overnight to allow the flavors to develop.
