- 2 ripe pears, sliced
- 2 tablespoons apricot jam, melted

In a large bowl, whisk together the flour and sugar. Using a pastry cutter or your hands, cut in the butter until the mixture resembles coarse crumbs.
Stir in the ice water, 1 tablespoon at a time, until a dough forms. Flatten the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
Preheat your oven to 375Β°F (190Β°C). Roll the dough out on a lightly floured surface to about 1/4 inch thickness. Fit the dough into a 9-inch tart pan and trim the edges.
Bake for 15-20 minutes, or until the crust is lightly golden. Remove from the oven and allow to cool.
Meanwhile, in a food processor, grind the pistachios until finely chopped. Add in the heavy cream and powdered sugar and pulse until smooth.
Spread the pistachio cream into the cooled crust and arrange the pear slices on top. Brush the pears with the melted apricot jam.
