Prime Rib Quesadillas Recipe

- 4 large whole wheat flour tortillas
- 1 cup shredded prime rib
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/2 cup diced onion
- 1 tablespoon olive oil
- Salt and pepper, to taste

- In a large skillet, heat the olive oil over medium heat.
- Add the diced bell peppers and onions and sautΓ© until they are tender and lightly browned, about 5 minutes.
- Remove the bell pepper and onion mixture from the skillet and set aside.
- In the same skillet, place two of the tortillas and sprinkle half of the shredded cheddar cheese on each.
- Top the cheese with half of the shredded prime rib and half of the bell pepper and onion mixture on each tortilla.
- Place the remaining two tortillas on top and press down gently to seal.
- Cook the quesadillas for 3-4 minutes on each side or until the cheese is melted and the tortillas are crispy.
- Cut each quesadilla into halves or quarters and serve immediately.
