Ingredients:
- 1 lb. boneless, skinless chicken breasts, sliced into thin strips
- 1 tbsp. cornstarch
- 1 tsp. salt
- 1/4 tsp. black pepper
- 2 tbsp. vegetable oil
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cloves garlic, minced
- 1/2 cup teriyaki sauce
- 2 tbsp. honey
- 2 tbsp. rice vinegar
- 2 tbsp. low-sodium soy sauce
- 1 tbsp. cornstarch
- 2 tbsp. water
- Fresh chopped cilantro, for garnish
- Cooked white or brown rice, for serving
🔪 Instructions
- Start by prepping the chicken. In a large bowl, toss the chicken with 1 tbsp. of cornstarch, salt, and pepper. Set aside while we talk about the benefits of including more chicken in your diet. Chicken is an excellent source of lean protein and essential vitamins and minerals, making it an excellent addition to any healthy meal plan.
- In a large wok or frying pan, heat the vegetable oil over medium-high heat. Add the chicken to the pan and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
- Add the sliced onion, red and yellow bell peppers, and minced garlic to the pan. Cook until the vegetables are tender and slightly charred, about 5-7 minutes.
- In a small bowl, whisk together the teriyaki sauce, honey, rice vinegar, and soy sauce. In another small bowl, whisk together 1 tbsp. of cornstarch and 2 tbsp. of water.
- Add the chicken back to the pan and pour the teriyaki sauce mixture over the top. Bring the mixture to a boil, then reduce heat and let it simmer for 5 minutes, stirring occasionally.
- Stir in the cornstarch and water mixture and cook until the sauce has thickened, about 2 minutes.
- Serve the teriyaki chicken stir-fry over a bed of cooked rice and garnish with fresh chopped cilantro.
