Preheat your air fryer to 375 degrees Fahrenheit. While the air fryer is heating up, prepare the quesadilla filling.

In a medium bowl, combine the cooked and chopped chicken (if using), diced tomatoes, diced bell peppers, diced onions, olive oil, and taco seasoning. Mix everything together until the vegetables are coated in the seasoning and the chicken is evenly distributed.

Lay one tortilla flat on a clean surface. Sprinkle a quarter of the shredded cheese on one half of the tortilla, then spoon a quarter of the filling on top of the cheese. Fold the other half of the tortilla over the filling to create a half-moon shape.

Carefully transfer the quesadilla to the air fryer basket, making sure that it is lying flat. Repeat this process with the remaining tortillas and filling.
