Blueberry Baked Donuts

Rinse the monkfish tail and pat it dry. Cut it into 2-inch pieces and season with salt and pepper on both sides.
In a large saucepan, melt the butter over medium heat. Add the lemon juice, parsley, and a pinch of salt and pepper. Stir to combine.
Carefully add the monkfish to the saucepan and gently poach for 5-7 minutes, or until it's opaque and just cooked through. Remove the monkfish from the saucepan and set it aside.
In another large skillet, heat the olive oil over medium heat. Add the carrots, zucchinis, garlic, thyme, rosemary, and a pinch of salt and pepper. Sauté for 7-9 minutes, or until the vegetables are tender.
To serve, arrange the herbed vegetables on a large serving platter. Place the butter-poached monkfish on top of the vegetables. Drizzle any remaining butter from the saucepan over the top of the dish.
